Here’s a look at what California is pouring this fall—and how to make the most of every sip with expert pairings to match.

Penedès, Spain

We asked San Diego: What’s your favorite Cava? Skillfully crafted by a family whose history dates back to 1901, this is a Cava that Champagne enthusiasts will appreciate. Combining Xarello and Chardonnay for body with other native varieties and aged 12+ months on lees, expect crisp notes of apple skin, tangy citrus and aromatic florals.

Recommended Pairings: Enjoy as an aperitif, with latkes, or clam dip

“After an amazing trip to Spain, I have a new found appreciation for CAVA! Naveran Brut Nature from the Alt Penedès, just outside of Barcelona, not only shows the authenticity in it’s labels but the bubbles inside give the feeling of being there, enjoying the vibrant culture and history. Dating back to when the legacy started in the 19th century, this Cava has been produced with organically grown grapes and estate-bottled. Also having zero dosage, it gives a lovely bone-dry purity and mineral character, all while having depth, complexity, and elegance. Although it’s from Spain, this Cava can be very versatile with many cuisines from all over the world and sipped any time of year. Cheers!”

Katherine, San Diego Sales
Limoux, France

We asked LA: What’s your favorite crémant? Let’s take you to the birthplace of sparkling wine with Cuvée Francoise Cremant de Limoux Rosé! This methode traditionelle sparkler is delicate and fresh with ample notes of strawberries and raspberries. Organic fruit and a pretty-in-pink label put this crowd-pleaser over the top. We can’t resist a sustainable bottle that is both gluggable and gift-able.

Heidi’s Recommended Pairing: Prosciutto Wrapped Figs

The delightful combination of creaminess and acidity in the Cuvée Francoise Rosé is perfectly reflected and complemented by the combination of sweetness in the figs and saltiness in the prosciutto. Enjoy!”

Heidi, East Los Angeles Sales
Veneto, Italy

We asked our Corporate team: What pairs best with dessert? One of our most unique and versatile portfolio items, Paladin Agricanto is a Venetian liqueur that instantly brightens the room. It is lovingly crafted by the Paladin family in a rural tradition that has been around since the 1940’s. Velvety and viscous, it’s ideal to keep a bottle chilled for pouring over ice cream, adding a new twist to your favorite cocktail (like a float for your margarita), or with any and all holiday pies.

Bret’s recommended pairing: Enjoy as a digestif!

“Most of the time I enjoy Paladin Agricanto, it is with close friends or family. I will break out a small glass of Agricanto after dinner as we are eating something sweet. It is definitely a conversation starter, and any skepticism quickly turns to intrigue. This sweet liqueur is made by the rare Raboso grape from Veneto, Grappa and spices. The deep rich color matches its intense flavors and always makes people smile.”
