Tasting Notes The seductive shades of pink and orange that first shine through the delicate froth will both charm you and invite you to raise your glass to your lips. This wine sparkles with a myriad of colours, grey gold, pale pink, salmon pink, even a few hints of earthy brick. This wine is unfined & unfiltered.

The Story

José Ardinat and his wife Joelle Faust took over the family Champagne vineyards from organic pioneer Serge Faust. Now their son Christophe is the next generation to work the same healthy vines. 'Oeil de Perdrix' translates to 'Eye of the Partridge'.

8 hectares in 32 different plots makes for difficult vineyard management, but that hasn’t deterred Christophe Ardinat, who remains faithful to his father and grandfather’s legacy as one of only a few certified organic growers in Champagne. He is even experimenting with Biodynamic practices. Located in Vandières, along a hillside above the Marne river in the middle of the AOC, the area & estate are known for Pinot Meunier dominant Champagnes.
