Winemaking The Limestone Hill Chardonnay is crafted from specific vineyard sites aged 7-22 years old, that offer a mix of limestone and heavy clay soils. The nuances that each terroir bring is what makes Limestone Hill a bright, fresh, complex and elegant wine. Robertson's climate is dry and warm with 400mm annual rainfall, supplemented by river irrigation and cooling ocean breezes. Daytime temperatures reach 30°C (85°F), with cooler nights helping the grapes retain acidity. Winters are cold and frosty, aiding vine dormancy. The 2024 harvest started in February, with early budding due to a dry winter and warm spring. Ideal conditions in January and February allowed most Chardonnay grapes to be harvested before heavy March rains. De Wetshof employs site-specific vineyard management with detailed records since the 1970s. Grapes are picked in the cool morning, fermented in stainless steel, and matured on lees for four months.
