Winemaking Manual harvest during March and April. Manual selection of grapes upon arrival at the winery. Pre-fermentation maceration for 7 days at 10oC (50oF). Fermentation lasted 7 days at 26oC (79oF) in concrete tanks using selected and native yeasts. Post-fermentation maceration lasted 20 days. Malolactic fermentation occurred naturally in the concrete tanks. Aging in French oak barrels (1/3 new, 1/3 second use, 1/3 third use) for 12 months, then 6 months in bottle before being released.

The Character

Overall Fresh and elegant.
Aromas Spicy, pink peppercorn, red apple, menthol, hints of leather, honey, sesame seeds and sweet paprika.
Mouthfeel A juicy, full finish: lingering and delicately balanced.
Tasting Notes Appearance: Garnet with plum-like hues. Aroma: Spicy, with high aromatic intensity and notes of pink peppercorn, red apple and menthol. Upon swirling the glass, hints of leather, honey, toasted sesame seeds and sweet paprika emerge. Palate: An attack revealing this wine's distinctive personality, resulting from its medium-to-high acidity and round tannins that balance the aromas on the palate. Notes of roasted bell peppers, damp soil and honey. A juicy, full finish: lingering and delicately balanced.
Pairings Slow-braised veal, spicy shredded beef, and mature cheeses.
