Winemaking All varietals of the winery were fermented in a mix of stainless steel and wooden upright fermenters with the use of native yeasts. For the varietal bottling they selected a mix of lots from newer and older oak, the wines were racked and blended in June 2023 and aged the wine together in one 1200-gallon oak foudre and some smaller barrels until bottling in April 2024. The wine is unfined and unfiltered.
Aging Aged for one year in 1200-gallon French oak foudres.

The Character
Overall Powerful and impressive.
Aromas Blackberry, iron, soy, minty spice, pepper steak.
Mouthfeel Juicy with some serious tannins.
Tasting Notes A nose with all black and mostly savory elements: iron, soy, blackberry, and pepper steak. The mouth is juicier than the nose first suggests, with flavors of blackberry and minty spice, more of the iron- like mineral note, and some serious tannins at the end. Powerful and impressive: a Syrah that could go out two decades.

The Story
Although most of their Syrah is used in the Esprit de Tablas and Côtes de Tablas blends, in vintages where the Syrah grape’s varietal character is clearly expressed, they reserve a small amount for a varietal bottling because they believe that Paso Robles is one of the world’s great environments for Syrah.
