COIT Spirits

Lovers of gin owners Gerry & Linda Rowland established Coit Spirits in 2018.
Inspired by the undaunted courage of Lillie Hitchcock Coit and pay tribute to her daring boldness with Coit Spirits. The label a see-through bottle incorporates Coit Tower into the bottle shape.
Small batch - Gin distillations are 1 shot 230-gallons, Bourbon batch is 12-barrel.
Distilled Tea Gin not infused, a distilled tea gin has no tannin or color from the tea and captures the pure essence of the tea character.
‘Contemporary Gin’ varies from London Dry Gin in that the juniper is second in character to another botanical and in this case it’s the tea leaf used.
Coit is only US distiller with a product line using Distilled Tea Gins as a medium.
Tea Gins are difficult to make. The tea character is unstable and is lost within 4-7 days. Over 2 years Coit Spirits solved the stability problem via recipe, distillation and botanical fixatives working with the perfume industry.

Biography

Long-time vintners, lovers of spirits and enamored by gin, we began this journey to capture the essence of each ingredient to craft…spirits with spirit.

Using foragers and wildcrafters, we find our herbs at peak maturity. The ratio of each ingredient affects the synergy of the final aromas and flavors. A botanical mix that looks good on paper may not succeed, and only taste will tell.

Wine generously allows you three to four weeks during the fermentation to get the basic product right. Gin gives you five hours to bring out the individual character of the botanicals during the distillation.

Our amazing journey has brought us to crafting spirits… Trained by European Ginsmiths we felt perfectly prepared for the challenge, in addition to having harvested and bottled 50 vintages of wine in three countries, 2 hemispheres.
