Winemaking Manual harvesting of the grapes which are de-stemmed, crushed and left to macerate for about 38/40 days in terracotta amphorae. During this period, a series of manual pumping over are performed every day. This operation serves to promote oxygenation and the passage of color. At the end of the period in which the must has remained in contact with the skins, the drawing and pressing takes place. The must thus obtained is placed in a stainless steel tank at a controlled temperature for about 1 week. The aging of the wine will continue in the Amphora for about 2/3 year until bottling which usually takes place in summer. Then it will be left to refine in the bottle for at least 2 year, before being put on sale.

The Story

The flagship wine of the region and a native grape variety of Friuli with ancient origins, it was first documented more than two centuries ago. (Friuliano is entirely different to Hungarian “Tokay”, made from a blend of Furmint, Hàrzevelu and Muscat Lunelu grapes, whose name indicates a precise geographical area).
As the result of a ruling by the European Court, the name “Tocai Friulano” was abandoned and has been replaced by the synonym “Friulano”. Also grown in nearby Veneto, it is in Friuli, in particular, that the grape variety is used to make a 100% varietal wine.
