Winemaking Hand picked and lightly pressed, immediately upon arrival. A blend of carefully selected Chardonnay clones are pressed and fermented separately. Fermentation temperature was kept low to enhance aromatics, with lees stirring to develop structure. After fermentation, the wine was blended, lightly fined with naturally occurring bentonite clay, chilled for cold stability, filtered, and bottled. The finished wine is then bottled under pressure to dissolve CO 2, creating a lively sparkling character
