Tasting Notes After approximately two years on the lees, there are notes of freshly baked bread and pastry that enhances the more fruit forward style of the wine. Finally, after several months on the cork, the wine develops caramel and hazelnut complexors.

The Story

On average 80% of the wine undergoes malolactic fermentation to bring balance to the acid profile. This method was adopted early on to create a wine that is richer, fuller and more approachable without compromising its structure.
The blend is composed of 85% current vintage wine and 15% reserve wine. The reserve wine is blended and matured by following a solera system or continuous cuvee approach. A small portion of reserve wine is set aside and used in the dosage mix.
Every bottle is individually fermented and aged a minimum of 2 years on the yeast.
