Winemaking Primary fermentation occurs spontaneously with indigenous yeasts and bacteria. The barrel ferments in our cellar are cool and very slow, typically taking several months to complete their primary fermentation, finally finishing when the cellar starts warming up in the spring. During this time, malolactic fermentation also occurs spontaneously. Usually, one hundred percent of the malic acid is converted to lactic acid, giving the wines a richer, rounder mouthfeel which is also enhanced by the extended time spent on their primary lees. After roughly seven months in barrel, this wine was racked to tank for blending and bottling, receiving a small sulfur addition before bottling.

The Story

A new label was needed as we have totally reconceived an Oregon tradition — Druid’s Fluid — as estate Biodynamic® Oregon Blends. The Druid’s Spiral on our new label expresses the Druid’s connections to the mysteries, energy and power of the natural world — concepts deeply connected to our biodynamic farming and winemaking.
It is always our goal to honor the important role that Dick Troon played in the wine history of Oregon when he first planted vines here in 1972. Dick was quite the personality and there are many, many charming stories about his irascible personality, many of which are certainly apocryphal, which may be the case in the creation story (myth?) of the wine Druid’s Fluid.
That story, as told to us by more than one person, was that one vintage Dick had a stuck fermentation that left some unfermented sugar in the wine. When he shared this slightly sweet red wine with his neighbors it was a hit. Consumer preferences in wine have changed somewhat since the 1970s. The owners after Dick tried to make the concept a bigger brand by buying a lot of fruit from other growers. The result was, to say the least, less charming than Dick’s wine.
When we took over at Troon, we did not know quite what to do with Druid’s Fluid. The first year, 2016, we had to deal with existing grape contracts. By 2017, we had ended those contracts but had several vineyard blocks that did not live up to our vision for Troon Vineyard that ended up in Druid’s Fluid. To say the least, the last few vintages have been transitional for Druid’s Fluid.
That transition is over. These two wines you have just received were made with intention — a key element of biodynamics. Our first step was to make these wines only from Biodynamic® certified estate grapes. This dropped production by almost 90% from the previous owners. The next was our concept for the wines. As unabashed lovers of red and white Côtes du Rhone wines, that’s where we found our inspiration. We wanted to make wines that over-delivered — after all, isn’t a winery defined more by the quality of their least expensive wine than their most expensive?
That’s how these wines evolved. Now each year our Biodynamic® Oregon Estate Blends will be an expression of our vineyard in a particular vintage. The blends will change vintage-to-vintage expressing the natural cycles of life on our farm and are crafted to be enjoyed upon release. The majority of the wines that go into these blends are from vines that were farmed from the beginning for these wines — again intentionality. At Troon, we know before bud break which rows will be used for each wine. Then we select a few additional barrels that will add complexity and depth to these blends.
The label and the wines are not the only thing that is totally new about these releases. Both carry our new ingredient labeling on the back label, which all of our wines will carry moving forward.
