Winemaking The grapes for Villarini Grillo are soft-pressed and the must obtained ferments for 15/20 days at a controlled temperature, 17-18 °C (62-64 °F), in stainless steel tanks. The wine is then stored at 18-20 °C (64/68 °F) in steel tanks until the bottling time.

The Story

Sicily, the "land of the sun”, has a Mediterranean climate along the coasts. In the inland areas instead, the climate becomes slightly more continental at hilly levels, with moderately cold winters and hot summers. Among the local grapes grown here are Nero d’Avola and Grillo. The grapes for Villarini come from selected family owned vineyards, and the wine is made from 100% organically grown grapes, with no use of pesticides or herbicides in order to respect the earth, the terroir, and to contribute to biological diversity.
