Winemaking We crush and press the Chardonnay clusters and quickly transfer the must to French oak barrels of varying sizes where it is left to ferment by indigenous yeasts. Malolactic fermentation happens sometime the following Winter or Spring. After spending twelve months in barrels followed by another six in tank, this wine was bottled in March 2021, lightly fined and unfiltered.

Mouthfeel Fresh, minerally tactile, with lees richness
Tasting Notes Colour; light golden hue Good natural acidity, fresh fruit with delicate white floral aromas. Classic cool climate acidity structuring the wine. long and textural, very tactile sensation from the acidity. Long lees aging coats the acidity. Makes you salivate from the hint of salinity. The freshness pulls the acidity to a long generous finish. This wine will age gracefully for years to come.

The Story
At harvest time, preservation of natural acidity is key. Grapes with good acidity allow for fresh and stable wines, and better lend themselves to native yeast fermentations, less sulfur during aging and little to no filtration prior to bottling. Malolactic fermentation happens sometime the following Winter or Spring. 12 months in 228 lt french oak barrels and a few 500 lt french oak barrels and then settled in tanks with all the lees.
The vineyards for the 2018 vintage consist of Seven Springs in the Eola-Amity Hills AVA, certified LIVE and farmed to biodynamic standards.
