The Story
On average 80% of the wine undergoes malolactic fermentation to bring balance to the acid profile. This method was adopted early on to create a wine that is richer, fuller and more approachable without compromising its structure. Virtual Conversation & Tasting with Nicole Carter - Read More
The blend is composed of 85% current vintage wine and 15% reserve wine. The reserve wine is blended and matured by following a solera system or continuous cuvee approach. A small portion of reserve wine is set aside and used in the dosage mix.
Every bottle is individually fermented and aged a minimum of 2 years on the yeast.
