Tasting Notes The nose on this award-winning packaged sake is a terrific collection of steamed rice, tamago, Rice Krispies, soy sauce, forest floor, and cocoa aromas. On the palate, short bread, wheat toast, dried rice, cashew, nougat, milk chocolate, and marshmallow flavors swim on a dry, round, crisp, and tannin-like fluid that drinks best in a wine glass. Clean, light, dry, but slippery.

The Story

Award winning ceramic packaging is a tribute to the ornamental carp (KOI) that was developed in Niigata. Urban legend says that in the old days unscrupulous brewers would dilute sake so much that a gold fish could swim in it. “Not us”, says Imayo Tsukasa, whose flagship sake is the barrel select cask strength Junmai Daiginjo. Able to climb powerful waterfalls, carp are a symbol of strength and resilience.
