Sustainability Natural Fermentation

The Story

Sourced from older vines at one of the Bingham Family's Vineyards near Meadow, TX, in the High Plains. Mechanically-harvested and destemmed by the harvester, with about 3-4 hours of skin contact prior to pressing. While we do pickup a little more texture with destemming, we feel this is important to coax the thiols and terpenes (aromatic building blocks) out of the skins and into the juice. Very aromatic, with some texture and nice acidity.
