The Story

Takachiyo 59 Junmai Ginjo Chapters Series is a set of 10 Chapters with each chapter featuring a single rice variety for the most part with a couple of chapters venturing into a blend of two rice varieties.The purpose of the series is to let each rice express itself in an in-depth sake study. All of the sakes in this series are 59% milled, Nama (unpasteurized) and all are produced with 1801 yeast which creating an even playing field for this experiment. The results are mind blowing with immediate differences in the nose alone let alone the palate therefore the enjoyment and pairing applications are endless. If I had to describe the Takachiyo 59 series in a few words it would be generous, electric, memorable and mouthwatering.

Snowmelt from the mountain travel deep and for over a century before farms and breweries
tap into the aquifer at well over 240 feet in depth giving abundant pure and soft artesian
water, ideal for producing fragrant style of sake. The brewery prides itself on vertically integrating rice farming, rice polishing, production and carefully managed allocation of its limited production sake.
